No wine if…

Not all types of foods are suitable to be accompanied by a wine, but in certain cases can even cause such unpleasant reactions to leave the wine on the table. Here for instance,  with the artichokes no wine goes well, because the cynarin contained in the artichokes makes even the most velvety white wine disharrmonious and bitter.

With cooked and raw vegetables like spinach, chard, broccoli red wines are to absolutely avoided, much better to use a white wine not very  aromatic.

If you are used to pair grilled meat with mustard, ketchup, Tabasco don’t use any wine, because the spicy flavour of these condiments neutralized and  transform even the most lively and drinkable red wine.
